Cheesy spinach artichoke bagels smothered with Parmesan cheese is an ultimate breakfast or lunch.

Loaded up with fresh spinach leaves, chopped artichokes, and a creamy base, this former appetizer dip takes on a whole new life when served on a bagel.

Why you should make Bagels with Spinach Dip

Great way to use leftovers: Spinach dip is typically served simply as a dip in a bread bowl, but adding it to a bagel is the reuse tip you have been needing. In fact, it is also a great to use up leftover buffalo chicken dip and so much more!

Works with any recipe: It’s one of those classic recipes that many people already have a go-to for, so do not be afraid to use your own and then add it to bagels.

Ingredients: 

  • Artichoke hearts: Make sure canned artichokes are fully drained of excess water (or excess liquid) and coarsely chopped into bite-sized pieces. 
  • Fresh spinach leaves
  • Creamy Base: This dip recipe uses Dijon mustard, full-fat sour cream, and real mayonnaise for an excellent creamy base. 
  • Cheese: While many kinds of cheese can be a great choice, the smooth flavors of mozzarella cheese and the robust flavors of Parmesan cheese make the BEST dip.
  • Bagels
  • Topping: Crushed red pepper.

How to make Artichokes Spinach Dip on Bagels

  1. Add artichoke hearts, fresh cut-up spinach, sour cream, mayonnaise, mustard, mozzarella cheese, and 1/4 cup shredded parmesan cheese to a medium bowl and mix well. 
  2. Slice bagels in half and spread the spinach mixture on each bagel half.
  3. Place bagels cut side up on a baking sheet and top with remaining shredded Parmesan cheese and red pepper flakes.
  4. Broil on low for 8-10 minutes, turning halfway. HINT: Do not put it too close to the broiler, or you will BURN the dish. Broilers can work FAST and vary by oven.

Can you use leftover spinach artichoke dip instead?

If you have a leftover dip (like our crockpot spinach artichoke dip recipe) from a party, add right to bagels, top with Parmesan, and crisp in a toaster oven or broiler till cooked through and the top is golden brown.

Bagel Topping Ideas

Toppings can vary and the point is to use what you love. If you do not like the spice of crushed red pepper, try sliced green onions, cooked and crumbled bacon, or other fresh herb choices like Everything Bagel Seasoning (my personal favorite).

Spinach Artichoke Dip Bagels

Artichoke spinach dip freshly made and piled high on bagels is this week's delicious way to start the day.

Ingredients
 

  • 14 oz. artichoke hearts drained and chopped
  • 1 cup baby spinach leaves packed into cup and then chopped
  • 2 tsp Dijon Mustard
  • ½ cup sour cream
  • ½ cup real Mayonnaise
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese (divided by 1/4th)
  • 6 bagels cut in half
  • Red Pepper Flakes to taste – Optional

Instructions

  • Add drained and chopped artichoke hearts, cut fresh spinach leaves, sour cream, mayonnaise, Dijon mustard, shredded mozzarella cheese, and 1/4 cup shredded parmesan cheese to a mixing bowl and mix well.

  • Slice bagels in half and spread mixture on each bagel half.

  • Place bagels cut side up on a baking sheet and top with remaining shredded Parmesan cheese and red pepper flakes.

  • Broil spinach dip bagels on LOW for 8-10 minutes, turning halfway between cooking. Keep in mind that ovens vary and bagels should not be too close to the broiler to prevent burning.

Notes

Broilers can move fast. Keep bagels from being too close to the broiler and burning top.
