This molten lava mug cake takes longer to prep than it does to “bake” but can be done in minutes. MINUTES, I tell you! If you have never tried a mug cake, you are not alone. Most people default to traditional dump cakes or real cakes and fail to take advantage of meeting that need for chocolate cake in minutes.
This dessert recipe should free you from that and allow you to “whip up” a perfect dessert that will delight your taste buds in no time at all. Good news- this 1 minute Molten Lava mug cake DOES work, although read a few of my recipe notes to make sure you get it right the first time.
- 2 tablespoons of soft or melted butter
- 1/4th cup white sugar
- 2 tablespoons of boiling/hot water
- 2 tablespoons of cocoa powder
- 1/4th cup of self rising flour
- 4 bars of dark or semi-sweet baking chocolate

How to make Microwave Molten Lava Mug Cake
BOIL WATER – I know that boiling 2 tablespoons of water is annoying, so just can either do it in a saucepan (its best to boil about a cup so you don’t lose any to steam) and use that OR just microwave some water on high for about 3 minutes and use that. The boiling water helps melt down the butter and dissolve the white sugar. You will need this at the beginning of the recipe so do that first.
To get started, combine your soft room temperature butter, white sugar and boiling water. Stir well so ingredients combine and sugar dissolves.
Now add 2 tablespoons of cocoa powder and 1/4th cup self rising flour (not regular flour unless you are making it self rising – see below).
Stir the mixture until a cocoa batter forms, about 1 minute. Make sure you scrape the ides of the mug so there isn’t excess powder.
Now break off 2-4 mini bars of chocolate. Traditionally, in a molten lava cake, this is dark chocolate.
You can also buy semi-sweet, white chocolate and regular milk chocolate. Place in mug and stir so the batter covers the chocolate.
Microwave on high for 1 minute to 1 minute 30 seconds.
Keep in mind that how your mug cake cooks will depend on a few things – the size of your mug and the temperature of your personnel microwave. Mug cakes need a minute to rest once coming out of the microwave to solidify, so it may look a little gooey initially but give it a minute. You can also cook it up to 30 seconds more if you prefer more of a cake like batter.
This batter is a brownie type batter and the extra chocolate bars will MELT into the mug and produce melted chocolate under the batter. Do not mistake that for raw batter (melted chocolate).
You can eat the lava cake right of the mug or combine with some vanilla ice cream for a real treat.
Homemade Self Rising Flour
I always keep self rising flour in the house in addition to regular flour. Self rising flour is simply a combination of flour, baking powder and salt. I would find it almost impossible to create that in the small tablespoons, but its easy to make and just use what you need and set aside the rest for later.
To take regular flour and translate to self rising flour, combine 1 cup flour, 1 1/2 teaspoons of baking powder and 1/4th tsp of salt.
Mix well with a whisk before portioning out for your mug recipe.
