Mini Pancake Skewers

While this isn’t precisely a pancake recipe, this is a fun idea for charcuterie boards, special breakfasts for kids, and perfect for a holiday brunch party. 

Mini silver dollar pancakes (homemade or frozen is fine) piled on a kabob with fresh fruit like strawberries and bananas between.

Dusted with powdered sugar, these grab-and-go breakfast skewers are as adorable to look at as they are to eat.

Sticks, Skewers, and Kabobs

Before you get started, you will need to have skewers on hand. We suggest smaller bamboo skewers like these or blunt-end swizzle sticks. If you get full-size sticks, there will likely be too much food on one skewer to fill it up, so stick with shorter-inched ones.

Ingredients:

  • Mini pancakes – frozen or homemade fluffy pancakes are fine.
  • Fresh fruit washed and sliced – Fresh Strawberries, blueberries, and bananas are the most common.

How to make Mini Pancake Skewers

  • Cook pancakes according to pancake mix or frozen package directions.
  • Place fresh fruit onto a small skewer and follow with pancakes. This will be a silver dollar pancake, strawberry slice, mini pancake, banana slice, etc. You can also pile up fruit and finish with tiny pancakes (as we did) on the bottom. 
  • Place onto a serving platter and sprinkle with powdered sugar.
  • Serve pancake kabobs immediately.
