This easy, oven roasted Brussel sprouts with garlic recipe needs nothing more than a few simple ingredients from your pantry to make a delicious side dish that compliments nearly every protein. Simple and fresh, the only way to truly enjoy Brussels sprouts is straight out of the oven – and you will be amazed at home simple it is to garlic roast up.

When it comes to Brussels sprouts, I can’t always say I was a fan. I actually didn’t even try them till I was well into adult hood. My spouse happened to have some with bacon and convinced me they didn’t taste like feet and to give them a shot. I am really good at trying things, so why not? What I found as a veggie that I had missed a lifetime of and that I adore Brussels sprouts.
They can be eaten and paired with so many kinds of seasonings, like my maple bacon Brussels sprouts, and also taste delicious just oven roasted with some crushed garlic.
About a year ago I gave up most carbs, which means when I make sausage that the red beans and white rice are a no go. I found that Brussels sprouts make a fantastic substitute that SERIOUSLY fills you up and compliments your favorite sausage (which as you can see, I cooked with below).
Oven roasted Brussel sprouts with garlic recipe
- Fresh Raw Brussels Sprouts
- 3 tablespoon olive oil
- 2 cloves crushed garlic
- sea salt
- black pepper
Switch it up and serve with: Bacon, Parmesan, or even some Lemon!
How to cook Brussel Sprouts in Oven with Garlic
- Preheat oven to 425
- Cut your brussels sprouts in half and place in bowl
- Cover with 3 tablespoons of Olive Oil, 2 cloves of crushed garlic, and mix so all of your veggies are coated
- Lay on sheet pan
- Sprinkle with black pepper and sea salt
- Roast for approx 15-25 minutes, rotating your Brussel Sprouts for even browning.
Also need sheet pan.
Brussels Sprouts Carbohydrate Amount
There are approximately 8 carbs in 1 cup of Brussels Sprouts. While its a great vegetable with many benefits, if you are on a low carb or keto diet, it isn’t your best low carb choice.
Is it Brussel Sprouts or Brussels Sprouts?
This green vegetable is actually from Brussels (which I have been to!) and is in fact, BrusselS sprouts. That being said, many people shorten it to Brussel Sprouts. I don’t think it overly matters since most people understand what you mean either way.
Brussel Sprouts Grow on a Stem!
I was at Fresh Market and thought this was so amazing. They come on a stem! I guess I never thought about how they grow and thought this was so cool I wanted to share.

Ingredients
- 1 pound Brussels sprouts easily altered to any amount you like
- 3 tbsp. Olive Oil
- 2 cloves of crushed garlic
Instructions
- Preheat oven to 425

I thought you might be interested to know that brussels sprouts are fresher and will last longer if you are lucky enough to be able to buy them on their “tree” instead of separately.
